Carbonara is an Italian pasta dish from Rome, traditionally made with egg, hard cheese, cured pork and black pepper. The word carbonara comes from carbonaro (the Italian word for "charcoal burner"). Some believe the dish was created as a tribute to Italian coal miners; others believe the pasta was a way for families who could not afford meat to add protein to their pasta while using whatever meats (usually guanciale or pancetta) and cheeses (Pecorino Romano or Parmigiano-Reggiano) they had on hand.
