"Spaghetti and meatballs is better when made homemade. It’s much tastier than purchasing ready to cook spaghetti and meatballs and tomato sauce. Served with a piece of delicious French bread and a bottle of wine. Or, serve this up to your friends together with a slice of garlic bread and fresh okra salad for a perfect meal idea! This pasta favorite is guaranteed to please the entire crowd. The mixture of beef, chorizo, and oregano makes the meatballs flavorful. You can use ground chicken or a combination of ground beef and pork to create a wonderful, umami-bomb meatball as well."

Ingredients

  • 14 ounce dried spaghetti
  • 10 ounce ground beef
  • 6 ounce chorizo
  • 1 cup bread crumbs
  • 1 cup finely chopped oregano
  • 1 cup freshly grated Parmesan
  • 1 cup grated cheddar cheese
  • 1 egg
  • 2 clove Garlic
  • 1 teaspoon ground chipotle peppers
  • 2 tablespoon olive oil
  • 1 cup onion
  • 1 ounce yellow bell pepper
  • 28 ounce can crushed tomatoes
  • 1 bay leaf
  • Salt and pepper
  • 1 cup beef stock

Instructions

  1. Cook pasta according to package instructions. Set aside.

  2. In a large bowl, combine beef with bread crumbs, finely chopped chorizo, parmesan, oregano, minced garlic, a teaspoon of salt and chipotle peppers.

  3. Mix until fully incorporated and form them into 16 balls.

  4. Add oil in a heated skillet. Cook the meatballs until browned on all sides. Set aside.

  5. Using the same pan, sauté minced onions until fragrant.

  6. Add crushed tomatoes, chopped bell pepper, beef stock, and bay leaf. Bring to a boil and reduce to simmer.

  7. Add the meatballs and cook for 10 minutes.

  8. Serve pasta with a generous scoop of meatballs and sauce.

  9. Sprinkle with grated cheddar cheese.

  10. Enjoy with bread and a bottle of red wine.
