Baked Mostaccioli and Vegetables

Ingredients

  • 1 pound mostaccioli noodles or rotini
  • 2 small zucchini
  • 2 small yellow squash
  • 1/4 pound mushrooms, sliced, about 1 cup
  • 1 small onion, halved, thinly sliced
  • 1 medium green pepper, julienned 1 inch long
  • 4 cup homemade meatless spaghetti sauce or one 32-ounce jar
  • salt, to taste
  • black pepper, freshly ground, to taste
  • 1/2 pound mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, freshly grated

Instructions

  1. Preheat oven to 325 degrees F.
     
  2. Cook noodles according to package directions until al dente.
     
  3. Drain, rinse, drain again.
     
  4. Cut zucchini and yellow squash lengthwise into quarters. Then cut each quarter crosswise into 1/8 -inch thick slices.
     
  5. Mix cooked noodles, zucchini, squash, mushrooms, onion and green pepper in large bowl.
     
  6. Stir in spaghetti sauce, salt, and pepper.
     
  7. Transfer mixture to an oiled 13- by 9-inch baking pan.
     
  8. Top with cheeses.
     
  9. Bake at 325 degree F until hot and top is golden, 25 to 35 minutes.
