Vodka Rigatoni

Ingredients

  • 1 pound rigatoni
  • 8 ounce pepper vodka (recipe below)
  • 3 T olive oil
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 1 cup marinara sauce

Instructions

Cook rigatoni al dente, drain, return pasta to same pot, place over medium heat and keep stirring for 2 minutes until very dry and hot. Add vodka, after shaking the bottle so some pepper flakes are included. Cook and stir 1 minute, then carefully place lighted match to pasta (flame will develop!). After flame subsides, add olive oil and cream. Cook and stir until cream gets hot. Add Parmesan cheese and marinara sauce. Continue to cook just until the cheese melts. Serve hot. Pepper Vodka Add 6 Tbsp red pepper flakes to 1 Quart vodka. Let mixture sit at least two weeks.
