Gingerbread Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 teaspons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • Dash of ground cloves
  • 1/2 cup skim milk
  • 3 tablespoon molasses
  • 1 tablespoon vegetable oil
  • 1 egg, lightly beaten

Instructions

Combine first 5 ingredients in a large bowl, stir well. Combine milk and next 3 ingredients, add to dry indgredients, stirring until smooth. Spoon about 1/4 cup batter onto a hot nonstick griddle or skillet. Turn pancakes when tops are covered with bubbles and edges look cooked. Yield: 9 (4-inch) pancakes These taste great without butter or syrup or applesauce.
