Blackberry Oatmeal Muffins

Start your day off with these Blackberry Oatmeal Muffins. Tender and sweet with berries, kids and adults will delight in these for breakfast or brunch! Muffin recipes are always the best little treat to wake up to.

Ingredients

  • 1 1/4 cup boiling water
  • 1/2 teaspoon salt
  • 1 cup regular oats
  • 1/2 cup butter, softened
  • 1 cup firmly packed brown sugar
  • 1/2 cup sugar
  • 1/2 cup milled flax seed
  • 2 eggs
  • 1 1/3 cup self rising flour
  • 1 teaspoon ground cinnamon
  • 1 cup flaked coconut
  • 1 cup fresh blackberries

Instructions

  1. Preheat oven to 350 degrees F.

  2. Combine water, salt and oats; let stand 20 minutes.

  3. Meanwhile cream butter and sugars, add eggs and beat well.

  4. Combine flour, flax seed, and cinnamon; stir into creamed mixture. Add coconut and oats; stir well. Gently fold in berries.

  5. Fill paper lined muffin tins 2/3 full. Bake at 350 degrees F for 25 minutes.
