Fried Lamb Testicles

Ingredients

  • 4 lamb fries
  • 1/4 cup olive oil
  • 2 tbls lemon juice
  • 1 Tsp tarragon
  • 1/4 cup butter
  • 1 cup parsley
  • 1 egg, slightly beaten
  • flour
  • 3 Tbls milk
  • 2 tsp oil
  • 3/4 cup bread crumbs

Instructions

Yield: 2 Servings. Preheat a deep fryer to between 400 degrees and 425 degrees. Place the parsley in a deep frying basket and immerse in the deep fryer until the hissing stops (1 to 2 minutes). Drain and set aside. Combine the lightly beaten egg, whole milk and peanut oil in a bowl, beating slightly. Put the bread crumbs in another bowl. Put the flour in third bowl. Remove the loose outer skin from the fries. Remove the inner skin. Soak the peeled fries in enough cold water to cover for about 3 hours, changing the water at least three times during that period. Drain. Add cold water to cover again. Bring to a boil. Reduce heat and simmer for about 6 minutes. Drain again and plunge into cold water. Let stand until cool. Cut across the fries to make 1/3" thick slices. Combine the olive oil, lemon juice and tarragon. Marinate for at least 1 hour. Dry thoroughly. Dip each slice in the shallow bowl of seasoned flour, shaking off excess flour. Dip each slice in egg mixture. Allow excess egg mixture to drip off and place in the bowl of breadcrumbs. Make sure each slice is completely covered with breadcrumbs. Fry the slices in hot fat in a skillet until golden brown. Garnish with the deep fried parsley and serve with ketchup.
