Corn Dog Bites

This is such a fun, easy corn dog recipe, that you'll want to make it frequently. A definite crowd-pleaser, kids in particular like the little bite-sized pieces. Corn dogs: They're not just for carnivals anymore!

Notes

For full-size corn dogs: Insert wooden sticks or skewers into whole frankfurters; dip frankfurters into batter, and fry in 3 to 4 inches hot oil till golden.

Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup cornmeal
  • 1 tablespoon sugar
  • 2 tablespoon melted bacon drippings
  • 1 egg, beaten
  • 1 1/4 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1 16-ounce package frankfurters
  • vegetable oil (for frying)
  • prepared mustard, ketchup, picante sauce, for garnish

Instructions

  1. Combine flour, baking powder, salt, cornmeal, and sugar; stir in bacon drippings.
     
  2. Combine egg, buttermilk, and soda; mix well.
     
  3. Stir into flour mixture, mixing well.
     
  4. Cut each frankfurter into 10 pieces.
     
  5. Dip frankfurter sections into batter, coating completely.  Use wooden picks to aid in dipping.
     
  6. Fry in 3 or 4 inches hot oil (375f degrees) until golden, turning once; drain on paper towels.
     
  7. Insert party picks or toothpicks, and serve immediately.
     
  8. Serve with desired condiments.
