Spaghetti Squash

Ingredients

  • 1 medium spaghetti squash
  • water

Instructions

Cut it longwise and clean out the seeds. Fill the cavity left after you clean out the seeds, half way with water and wrap a piece of stretchable plastic wrap such as Saran or Glad Wrap around it loosely. Microwave until you can poke a fork in it and it's tender, about 10 minutes. Be very careful because it will be hot. Use potholders. After the squash is done, remove the plastic wrap and spill out the water. Hold in one hand (with a potholder) and take a fork and scrape out the strands of squash. It should come out like long strands of spaghetti. You can do several things with it. I usually make up my regular spaghetti sauce with meat, green peppers, mushrooms, onions, perhaps zucchini and pour it over top of it with some Parmesan cheese or whatever type of cheese you like. I have also used butter, salt and pepper on it. You can bake it in the oven as a casserole adding chicken and cream of mushroom soup.
