Chile Rellenos

Ingredients

  • 4 eggs
  • 3/4 teaspoon baking powder
  • 4 tablespoon flour
  • 1/4 teaspoon salt
  • 12 large, peeled, whole fresh green chiles with stems
  • 1 lb. longhorn cheese, cut into strips
  • oil for frying

Instructions

Makes 12.. Beat eggs until foamy; add baking powder, flour, and salt. Set batter aside. Slit each chile open lengthwise below stem and insert cheese. Dip stuffed chiles in batter and fry in oil until golder brown Dry on paper towel. Optional: For heavier batter, add 1/4 cup yellow cornmeal.
