Calavacitas Colorado Style

Ingredients

  • 2 calavacitas for each person eating
  • 1 ear of corn (per person)
  • 2 pound fresh tomatoes
  • 2 large onions
  • 1 bulb fresh garlic
  • 1 pound chopped or ground pork
  • 1 pound chopped or ground beef
  • 2 chile pepper
  • 1 jalapeno (if desired)
  • salt and pepper to taste

Instructions

Chop all vegetables and place in separate bowls. Remove corn from the cob or slice each cob into one inch wide circles. Brown both meats and discard fat. In a large stock pot, heat one table spoon of canola oil on medium . Add each vegetable a little at a time, starting with the pumpkin ending with the corn, stir constantly. )Do not use a wooden or plastic spoon.spatula to stir, the weight of the veggies and the heat will break them.) Add the meat, about five minutes after the last of the veggies. turn down the heat and let simmer for about ten more minutes. Serve with corn bread.
