Carnitas

Ingredients

  • 2 - 3 lbs pork, cut into cubes
  • 2 - 3 tsp Adobo Seasoning
  • 1 - 2 tsp chopped garlic
  • Salt
  • Water
  • Lard or bacon drippings if meat is real lean

Instructions

Put cubed pork in large pan and just cover with water. Add salt. Bring to a boil. If using real lean meat add lard or bacon dripping. The idea is to cook the meat long enough to make it tender and when all the water is gone there will be the grease left that will brown the meat. Cook on medium high heat for about an hour, keeping a good eye on it at all times. If the water cooks out too fast, you'll have tough meat, if too slow it will over cook the meat and it will fall apart. Serve on flour tortillas with any desired topping.
