Atole de Fresa (strawberry Atole)

Ingredients

  • 4 cup milk
  • 2 cup water
  • 1 cup cream
  • 3 ounce corn starch
  • 1 1/4 cup sugar
  • 1 1/2 pound strawberries
  • 1 vanilla pod

Instructions

Puree the strawberries completely and strain through a damp cheesecloth. Dissolve the cornstarch in the water, add the vanilla pod, and boil until the mixture starts to thicken. Add the milk and sugar and continue cooking until it thickens again. Remove from the heat, add the strawberry juice, the cream, and if you want a drop or two of red food colouring to make it really pink! Reheat the mixture gently until it boils and then serve immediately in big mugs or glasses. You can sprinkle some cinnamon on top also if you want.
