Alternative Beef Enchiladas

These Alternative Beef Enchiladas incorporate cottage cheese and olives for a slight variation on the typical beef enchilada recipe. Could these be the best ever beef enchiladas? Try them for yourself and find out!

Ingredients

  • 1 pound ground beef
  • 1 cup cottage cheese
  • 1 can (4 1/4-ounces) ripe olives, drained and chopped
  • 2 tablespoon fresh parsley, minced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 flour tortillas (7 inches)
  • Sauce:
  • 1 medium onion, chopped
  • 1/2 medium green pepper, chopped
  • 1 tablespoon cooking oil
  • 1 can (15-ounces) tomato sauce
  • 1 can (4-ounces) chopped green chilies
  • 2 teaspoon chili powder
  • 1 teaspoon sugar
  • 1 cup (about 4-ounces) shredded Cheddar cheese

Instructions

  1. Pre-heat oven to 350 degrees F.
     
  2. In a skillet, brown the ground beef; drain.
     
  3. Combine with cottage cheese, olives, parsley, garlic powder, salt, and pepper.
     
  4. Place about 1/3 cup filling on each tortilla; roll up. Place tortillas, seam side down, in an ungreased 13 x 9 x 2-inch baking dish.

Sauce:

  1. Saute the onion and green pepper in oil until tender.
     
  2. Add tomato sauce, green chilies, chili powder, sugar, and garlic powder. Pour over tortillas.
     
  3. Cover and bake for 30 minutes. Sprinkle with cheese and return to the oven for 5 minutes or until cheese melts.
