Mango & Lime Marinade

Marinate chicken pieces or fish in this flavorful, fat-free mixture. You will love the zesty taste.

Ingredients

  • 1/2 cup mango chutney
  • 1 lime, juiced
  • 1/8 cup honey (optional)

Instructions

Chop the lime in half, remove the peel, keep juice and flesh. Add lime and chutney to your food processor bowl, you may have to do this part in stages. Pulse until the lime is fairly well chopped up, it will probably still be chunky, it doesn't have to be very smooth. Pour this into the bowl where you'll be marinating the meat, add the honey and mix well. Stir in the meat. Marinate at least 24 hours, longer if the meat isn't real tender. It is a good idea to use the honey if you're not a lime-obsessed freak like I am, it can get a bit sour and bitter, but it's good with or without the honey.
