Ingredients

  • 1 cup semolina (Cream of Wheat)
  • 1 teaspoon mustard seeds
  • 2 teaspoon cooking oil
  • 5 or 6 curry leaves
  • 4 - 5 finely chopped pieces of ginger
  • 4 - 5 Thai / Indian chilies, finely chopped or less
  • A few finely chopped pieces of onion (about 1/2 small onion)
  • A few chopped pieces of carrots and peas
  • Salt to taste
  • 1/2 small potato, chopped (optional)

Instructions

Recipe for 2 people. Roast the semolina in a frying pan on medium heat until it's golden brown. Now, set it aside and heat the oil in the frying pan until it's hot (don't let it fume). Add the mustard seeds into the pan, and wait till they start crackling. Now, gently add about 2 1/2 cups of water and and bring it to boil. Add the vegetables, ginger and curry leaves into the water and allow them to cook for a while. Now gently fold in the semolina and stir occasionally. Cook for about 8 - 10 minutes on reduced fire (until the excess water has evaporated and the Semolina is well cooked). Note that the consistency of the preparation should be roughly similar to that of mashed potatoes. Season with salt to taste, and serve with Indian pickles. Suggested garnishing: Freshly grated coconut and / or corriander leaves.
