Alu Chat

Ingredients

  • 5 large potatoes, peeled
  • 3 cup cauliflower florets
  • 1/2 cup cooked, drained peas
  • 1 teaspoon curry powder
  • 1 cup coconut milk
  • 3 tbsp. olive oil
  • 1 teaspoon ground coriander
  • a few cilantro leaves, chopped
  • 2 teaspoon mustard powder
  • 1 teaspoon cream of tartar
  • 1 teaspoon seasoned salt (regular salt is okay too)
  • 1/2 teaspoon black pepper
  • 1 teaspoon Tabasco (hot pepper sauce)
  • 1 cup medium or hot salsa (from jar)

Instructions

Fry all the spices save the cream of tartar in the oil until the aromas are released. Meanwhile, chop the potatoes and boil. Add the cooked potatoes to the fried spices, and to it add the coconut powder and cream of tartar, and salsa. Simmer for about an hour on the lowest heat possible, stirring occasionally.
