Frosting

Ingredients

  • 1 1/4 c sugar
  • 1/8 tsp cream of tartar
  • 6 T water
  • 3 egg whites
  • 1 tsp vanilla

Instructions

Cook sugar, cream of tartar and water in saucepan stirring until sugar dissolves. Continue cooking without stirring to hard ball stage (260 deg). Set syrup aside and beat egg whites until moist peaks form. When syrup is still hot but not "scalding" (shouldn't cook the egg whites), slowly pour hot syrup over whites, beating til all is added and stiff peaks are formed. Add vanilla, and keep beating til frosting holds its shape.
