Chocolate Frosting

Ingredients

  • 4 c sugar
  • 1 pound bitter chocolate
  • 2 c water
  • 6 egg whites
  • 1 t cream of tartar
  • 2 T instant coffee

Instructions

Beat the egg whites and cream of tartar until they form soft peaks; then beat in the coffee. Melt the chocolate, and keep warm. Combine the sugar and water, and cook to the hard crack stage. With the mixer running on high, pour the sugar over the egg whites, and beat until shiny. Rapidly beat in the hot chocolate. Frost the cake immediately, as this frosting sets in just a few minutes.
