"Halloween is a fun holiday, and not usually one we celebrate with dinner. But why not? Doesn’t matter if it’s family dinner with the kids, or you have adult friends coming over for cocktails. This mummy meatloaf is a great conversation starter! This Mummy Meatloaf is a super fun way to get kids to eat their dinner, perfect for Halloween! I’ve been making fun Halloween party food for quite a few years, this time I wanted to play off of a fun dinnertime meal I was inspired by years ago."

Ingredients

  • 2 pound lean ground beef
  • 3 cup tomato juice
  • 1 cup old fashioned oats
  • 2 large eggs
  • 1 cup finely diced onion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 1/2 pound yukon gold potatoes
  • 1 cup butter
  • 1 cup half and half

Instruction

  1. Preheat oven to 350 degrees F.

  2. Run the dry oats through a food processor to break them up.

  3. In a large bowl, combine oats, ground beef, tomato juice, egg, onion, salt and pepper, and mix well with a fork. Press firmly into a 2.5 quart ungreased oven safe glass bowl.
