Moravian Brown Sugar Christmas Cookies

These hearty Eastern European Christmas cookies are rich, filling, and sugary-sweet. Note: This recipe makes quite a few cookies, so have your sweet tooth at the ready!

Ingredients

  • 12 tablespoon butter, softened
  • 12 tablespoon lard, softened
  • 2 cup firmly packed light brown sugar
  • about 15 cups flour
  • 1 tablespoon ground mace
  • 2 tablespoon ground cloves
  • 2 tablespoon ground cinnamon
  • 4 cup molasses, warmed
  • 2 tablespoon grated lemon peel
  • 3/4 cup brandy
  • 2 tablespoon baking soda
  • 1/4 cup milk

Instructions

  1. In a large bowl, mix together the butter and lard, and cream them with the sugar. Add the flour to the bowl.
     
  2. Mix the mace, cloves, and cinnamon with the molasses and add to the bowl. Mix all together, using your hands.
     
  3. Add the lemon peel and brandy. Dissolve the baking soda in the milk and add to the dough. The dough should be stiff, but pliable. If necessary, add more flour.
     
  4. Roll the dough about 1/8 inch (3 mm) thick and cut into shapes of stars, crescents, animals, etc. Bake on buttered baking sheets in a preheated 350 degrees F oven for 10 minutes, or until crisp and well browned.
