No peek Turkey on the Weber Grill

Ingredients

  • 12-18 lb turkey
  • 3 apples, quartered
  • soy sauce

Instructions

The day before, rub the turkey with soy sauce, inside and out. Keep in refriger ator overnight. From a full 10-lb bag of charcoal briquets, remove 35 briquets and put in another bag. Put the remainder of the charcoal in the Weber grill and light. When the coals are grey, place the apples on the hot coals. Put turkey in disposable alum pan on grill and make sure all vents are open. Allow to cook for 2 1/2 hours, and remember, do not peek! This recipe is deceptively simple, but you must try it to believe it. Have your camera ready when you finally lift the lid, because it will be beautifully browned and pretty enough to grace the cover of a BBQ cookbook.
