Sand Tarts

Ingredients

  • 1 cup butter
  • 2 cup sugar
  • 2 eggs, slightly beaten
  • 4 cup SIFTED flour

Instructions

Beat butter, sugar and eggs until light and fluffy. Work in flour, about 1 cup at a time, to make a very stiff dough. Pat dough into a large, flat round cake, seal in a plastic bag and chill overnight. Roll dough (about 1/4 quarter at a time) on a lightly floured pastry board into a thin sheet (make as thin as possible). Cut out shapes with your favorite cookie cutters and place on a lightly greased cookie sheet. Brush with an egg-white wash and decorate. Bake at 350 degrees for 10-12 minutes, just until lightly tan. Remove at once to wire racks to cool.
