Schweinehaxen (ham Shanks)

Ingredients

  • 1 1/2 to 2 pounds ham shanks
  • 3 cup water
  • 1 tablespoon salt
  • 6 juniper berries
  • 1 bay leaf
  • Black pepper to taste
  • 1/2 small onion, coarsely chopped

Instructions

Put ham shanks in a pot and cover with 3 cups of water. Add 1 tablespoon of salt, berries, bay leaf, pepper to taste and onion. Bring to a boil, cover, and reduce heat to a simmer and let cook for 2 1/2 hours.
