Beef Rouladen

Ingredients

  • 4 pieces beef rouladan strips (long, thin steak available at European meat mkt)
  • 4 slices bacon
  • 4 slices dill pickles, thinly sliced
  • yellow mustard
  • salt and pepper
  • 1 medium onion, chopped

Instructions

Lay out beef strips, brush with mustard, sprinkle with salt and pepper. Layer one slice bacon per strip, then chopped onion then one pickle slice. Start at the narrow end and roll up the meat. Secure with toothpicks. Brown the meat on each side well. Add 1 cup hot water, cover and braise gently until done. Add more water if it gets low. This makes a wonderful gravy. Serving Ideas : serve with spatzle or potato pancakes or potato dumplings.
