Texas Peaches with Fresh Mint & Almonds

This wonderful fresh peach recipe is best enjoyed with a big bowl of ice cream. Seasoned with fresh mint and mixed with Spanish almonds and a splash of Frangelico, the taste is unforgettable. The subtleties of almond in every bite is simply irresistible.

Serves6

Ingredients

  • 2 pound fresh Texas peaches
  • 1/2 cup fresh mint leaves
  • 2 tablespoon Spanish almonds, sliced
  • 1/2 cup Frangelico
  • 2 pint Blue Bell vanilla ice cream

Instructions

  1. Wash, peel and seed peaches, then slice into thin pieces and set aside.
     
  2. Wash mint and gently slice, do not chop, into thin strips and set aside.
     
  3. Spread almonds onto a cookie sheet and toast in the oven for about 5 to 7 minutes.Remove almonds from oven and set aside.
     
  4. In a large bowl, combine the peaches, mint, almonds and Frangelico. Refrigerate for 4 hours until well chilled.
     
  5. Place a scoop of vanilla ice cream into a margarita glass or other serving dish, top evenly with peach mixture.
