Fresh Pears with Chocolate

Ingredients

  • 6 fresh pears
  • 1/2 cup plus 1 tablespoon sugar
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1 ounce (1 square) unsweetened chocolate
  • 1 tablespoon butter
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract

Instructions

Peel, quarter, and core pears. Place in saucepan with 1/2 cup sugar, the water, and salt. Cover and simmer until pears are tender. Drain pears, saving syrup for later use. Melt chocolate with butter and corn syrup over hot water. Add a little of reserved pear syrup and mix well. Add remaining pear syrup and 1 tablespoon sugar and bring to boiling point. Remove from heat and add vanilla. Chill pears and sauce. Serve pears with chocolate sauce spooned over each serving. Makes 8 servings.
