Grandma's Classic Fruit Jello Cake

Sweet and savory, this fruit mold recipe is absolutely beautiful and quickly steals the show at any dessert table! Filled with the crunchy goodness of oranges, whole cranberries, tart apples and chopped walnuts, Grandma's Classic Fruit Mold is a legitimate side dish to your meal. Ingredients

  • 2 whole oranges
  • 1 package fresh cranberries
  • 1 1/2 cup sugar
  • 2 tablespoon unflavored gelatin
  • 2 cup cran-raspberry juice
  • 2 cup whole berry cranberry sauce
  • 2 cup diced tart apples
  • 1/2 cup chopped walnuts

Instructions

  1. Wash the oranges & leaving the peel on, cut into quarters.

  2. Remove any seeds & cut the quarters into chunks.

  3. In food processor with steel blade, combine orange chunks with cranberries and 1/2 cup sugar. Pulse for 5 – 10 seconds.Set aside.

  4. In small saucepan, sprinkle gelatin and 1 c. sugar into cran-raspberry juice.

  5. Bring to a boil over medium heat & stir until sugar and gelatin are completely dissolved, about 5 minutes.

  6. Combine the hot cran-raspberry juice mixture and the whole berry cranberry sauce in a stainless bowl. Stir together well.

  7. Let stand for 5 minutes, then partially submerge in larger bowl containing ice water.Stir until cool.

  8. When completely cool, fold in diced apples, walnut pieces, and chopped orange-cranberry mixture.

  9. Pour into jello mold or ceramic dish & cover with plastic wrap.

  10. Chill until salad is set, at least 8 hours, or overnight. To remove from mold, set bottom of mold in hot water to loosen the gelatin. Carefully invert the mold onto your platter.

  11. Garnish with fresh orange slices and sugar frosted raspberries & cranberries
