"This Spanish Cod with Flavorful Vegetables is one of Spain´s best-kept secrets. It´s an unknown recipe from the small town of Baena in the province of Córdoba. Where it´s known as Bacalao a la Baenense. This dish is basically vegetables cooked in extra virgin olive oil and then topped off with a couple of cod fillets. And let me tell you, the end result is melt-in-your-mouth cod with the most incredibly flavored veggies. To make this dish I used cod fillets I bought frozen and thawed out. Just to make things easier and cheaper. Of course you can use fresh cod or any other type of firm white fish. Such as halibut, sea bass or even haddock."
