A seafood dinner recipe with a combination of flavors from mixed seafood and chorizo that will quell your seafood cravings. You can add fish slices to this recipe too. It works well with any white fish and with salmon. You can also tweak the recipe by adding some diced carrots and celery for added crunch. For additional flavor notes, you can add a stalk of lemongrass or a bunch"

Ingredients

  • 6 oz chorizo
  • 4 oz large fennel
  • 2 oz onions
  • 4 garlic cloves
  • 1 tsp tomato paste
  • 1 cup dry white wine
  • 4 cups fish stock
  • 3 oz tomatoes
  • 2 lbs seafood mix
  • ½ tsp chili flakes
  • ½ cup chopped flat-leaf parsley
  • 1 Lemon
  • 1 cup of Cannellini Beans
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Remove sausage from casing and crumble into small bite-sized pieces

  2. In a large heavy bottom deep skillet, brown chorizo in a little olive oil.

  3. Once browned, set aside.

  4. Pour off the fat, wipe out skillet with a paper towel.

  5. In the same skillet, heat olive oil on medium-high heat.

  6. Add chopped fennel, stirring often for about 3 minutes.

  7. Add sliced onion and sauté both until tender for 10 minutes.

  8. Add garlic stirring occasionally until garlic starts turning golden.

  9. Add tomato paste, constantly stirring for 3 more minutes.

  10. Add white wine and turn the heat down to medium-high, stirring until it cooks down by half.

  11. Add stock, tomatoes, browned chorizo, chili flakes, and cannellini beans.

  12. Bring to a simmer for 10 minutes.

  13. Add the seafood mix and simmer for 3 minutes and add lemon juice.

  14. Season with salt and pepper, serve.
