Ingredients

  • 3 cup sunflower seeds
  • 3 cup basil leaves
  • 3 tablespoon fresh dill
  • 1 tablespoon green onion
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 2 teaspoon olive oil
  • 2 salmon fillets
  • sea salt and pepper to taste
  • Sunflower seeds and dill

Instructions

  1. Preheat the oven to 320°F temp.

  2. Blend sunflower seeds, dill, basil leaves, lemon juice, garlic and olive oil in a blender until a smooth and creamy Pesto.

  3. Season the skin of Salmon fillet with a pinch of salt and pepper. Heated the oil in a frying pan. Sear the salmon for 3 minutes on each side.

  4. Cook the salmon in the preheated oven for 5 minutes.

  5. Serve the salmon with the pesto sauce on top. Garnish with few sunflower seeds and dill over the top and enjoy.
