Salmon Santa Fe

Ingredients

  • 3 lbs. salmon fillets
  • 1 cup salsa, drained
  • 1 cup mayonnaise
  • 1 Tbsp chopped garlic
  • 1 Tbsp cilantro, chopped
  • 1 Tbsp fresh lime juice
  • 1 dash white vermouth
  • fresh cilantro sprigs for garnish

Instructions

Combine all ingredients except garnish and thoroughly coat both sides of salmon fillets. To bake, baste well. Cook (skin side down, do not turn) and bake at 400 degrees until done. To saute, place well-basted fillet portions (skin side up) in an oiled pan over medium-high heat basting occasionally and turning once. Cook until done. Note: The leftovers make great Salmon Tacos.
