Grilled Halibut With Sweet And Spicy Pear Salsa

"The overlooked sophistication of halibut is somewhat amazing. I would think that it won’t get the same attention as a filet mignon steak or a succelent serving of lobster, but it sure deserves it share of praise. Of course preference for seafood will always sway opinions, but like I say – “good food is good food”. For those less familiar, there are always cheaper alternatives to halibut for a seafood feast (cod, haddock, and flounder). In the profiling of halibut however, consider its composition as a less fattier version to their counterparts, while having more of a meatier body. Many other fish in comparison are more delicate and flakier and don’t present as boastful of a taste that you will get with a piece like halibut. To this degree, many fare with halibut (including this one) will be poised for a great meal when prepared effectively."
