Greek Style Grilled Fish

"A great grilled fish recipe! Channel the Greek isles and grill your fish whole. A delicious fish recipe that can raise a simple dining experience to an exquisite level. Greeks are known for their love of seafood. This fish dish is inspired by this delicious Mediterranean cuisine. Here, we grill the fish whole. But, you can cut off the head and tail before grilling if you wish. You may use fresh parsley if dill sprigs are unavailable at your local grocers. Grapefruit and other citrus fruits are a great alternative for the lemons and limes."

Ingredients

  • 18 ounce whole sea bass, gutted and clean
  • 4 teaspoon olive oil
  • 3 dill sprigs
  • 6 lime wedges for garnish
  • 2 teaspoon salt
  • 2 teaspoon freshly ground pepper
  • 2 clove garlic
  • 1 teaspoon chili flakes
  • 1 ounce fresh oregano
  • 1 lemon
  • 3 tablespoon extra-virgin olive oil

Instructions

  1. Season the fish with salt and pepper.

  2. Rub with oil and insert the dill sprigs in the gut of the fish.

  3. Set aside and marinate for 5 minutes.

  4. Combine minced garlic, chopped oregano, and other dressing ingredients in a bowl. Set aside.

  5. Grill for about 7 minutes on each side.

  6. Serve and top with lime wedges and dressing.
