  • 3 tablespoon Olive Oil
  • 1 tablespoon Minced Garlic
  • 1 cup Diced Onion
  • 2 tablespoon Minced Shallots
  • 2 tablespoon All Purpose Flour
  • 1 cup Diced Green Bell Peppers
  • 1 cup Diced Celery
  • 2 Bay Leaves
  • 1 cup Chicken Stock
  • 1 tablespoon Old Bay Seasoning
