Mustard Crusted Tuna

Ingredients

  • 4 8 oz. tuna fillets (or swordfish or halibut)
  • 4 large eggs
  • 2 tablespoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • 3/4 cup flour
  • 1 3/4 cup seasoned breadcrumbs
  • 2 tablespoon dried (powdered) mustard
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 3 tablespoon butter

Instructions

  1. In a medium bowl, beat the eggs with the Dijon mustard and lemon juice.

  2. In another medium bowl, sift together the flour, breadcrumbs and dried mustard with the salt and pepper.

  3. Place each piece of tuna first in the egg mixture, coating each side. Then place in the breading mixture, thoroughly coating all sides of the fish.

  4. Heat butter in a large skillet with a lid, over medium heat. Add the breaded fish and let brown on one side for five minutes, covered.

  5. Flip and cook for another five minutes, covered, flipping once more until done. Fish is done when moist, but flaky and opaque throughout the meat.
