Ingredients

  • 16 oz boneless skinless chicken
  • 1/2 cup olive oil
  • 1/2 cup plain yogurt
  • 1/2 cup greek yogurt
  • 2 garlic cloves
  • 1 tsp ground black pepper
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • 1/4 tsp ground cinnamon
  • 3/4 cup dry couscous
  • 1 cup chicken stock
  • 1 tbsp honey
  • 1/4 cup sun-dried tomatoes in oil
  • 1/3 cup roasted walnuts
  • 1/3 cup fresh parsley
  • 2 oz yellow bell pepper
  • 3 oz red onions
  • 1 /2 cup tahini paste
  • 8 pieces tortilla wrap
  • salt and pepper to taste
  • 2 tbsp lemon juice

Instructions

  1. Marinate the chicken strips in two tablespoons of olive, plain yogurt, cloves, cumin, black pepper, cayenne pepper, and cinnamon.

  2. Place the chicken in a medium bowl, covered in the fridge for at least 30 minutes.

  3. While the chicken is being marinated, prepare the couscous.

  4. Bring the chicken stock to a boil.

  5. Stir in couscous, cover and remove from the heat.

  6. Let it sit for 10 minutes and fluff it with a fork.

  7. Stir in honey, drained sun-dried tomatoes, roasted walnuts, chopped yellow bell pepper.

  8. Season the couscous with salt and pepper to taste. Set aside.

  9. In a bowl, whisk together tahini paste, three tablespoon olive oil, minced garlic, lemon juice, Greek yogurt, and lemon juice.

  10. Season the tahini sauce with salt and pepper to taste.

  11. Fry the chicken strips in a large skillet over high heat with the remaining olive oil for 10 minutes until cooked through.

  12. Warm the tortilla wraps in a large skillet with no oil.

  13. To assemble, spread a tablespoon of tahini sauce in the center of the warmed tortilla wrap. Add a generous amount of couscous and chicken, and top with sliced red onions.

  14. Garnish with chopped parsley and fold before serving.
