One Eyed Jack

This easy breakfast recipe is also sometimes called Egg In The Hole because it's a piece of toast with an over easy egg in the middle. One Eyed Jack is a term used during the Great Depression era to describe this cheap breakfast idea. Simply butter a piece of bread, cut a hole out of the middle, and fry an egg inside! Sop up the runny yolks with the toast and you'll wonder why you didn't try it sooner.

Preparation Time10 min

Ingredients

  • 1 slice your favorite bread
  • 1 tablespoon butter
  • 1 egg
  • salt and pepper, to taste

Instructions

  1. Cut out the center of a piece of bread with the rim of a glass or a biscuit cutter. Heat the butter in a skillet, then place the piece of bread in the pan.

  2. Crack the egg directly in the center of the hole and cook for about a minute. Sprinkle with salt and pepper, then flip the bread over and continue cooking until desired doneness, until the bread is well toasted.
