Ingredients

  • 1 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 3 Large Eggs
  • 1 teaspoon Coconut Extract
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Cream of Coconut
  • 2 cup All Purpose Flour
  • 2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 3/4 cup Milk
  • 2 large Eggs
  • 2 large Egg Yolk
  • 1 cup Crushed Pineapple
  • 1/2 cup Granulated Sugar
  • 1 tablespoon Lemon Juice
  • 1 cup Salted Butter
  • 8 ounce Cream Cheese
  • 1 teaspoon Vanilla Extract
  • 3 cup Powdered Sugar
  • 4 tablespoon Heavy Whipping Cream
  1. Preheat the oven to 350°F. Spray three 7” round cake pans with non-stick baking spray and line the bottoms with parchment paper.

  2. In a large mixing bowl, beat butter and sugar until light and creamy. Add one egg at a time, beating well after each addition.
