Paleo Frozen Bananas Dipped In Chocolate

"Making these frozen banana desserts is super easy – you basically only need some ripe bananas and some chocolate for dipping it into. I first came across this simple dessert in Austin at a food cart. It was such a delightfully simple and yet delicious treat that I’m surprised it’s taken me so many years to recreate it myself. If you’re not aware of this, when bananas are frozen, they become very creamy in texture. So much so, that frozen bananas blended is often used as an easy dairy-free ice-cream substitute."

NotesWhile the prep for this recipe is only 5 minutes, you do need to place the bananas into the freezer for at least 1 hour.

Ingredients

  • 1 ripe banana, chopped into 3 equal pieces (approx. 2 inches in length)
  • 2.5 oz (70 g) dark chocolate, melted
  • 1 Tablespoon coconut cream, heated
  • 1 teaspoon coconut oil (optional)
  • 2 Tablespoons shredded coconut
  • 2 Tablespoons cacao nibs or chopped nuts (optional)
  1. Place a popsicle stick through each piece of banana so that it doesn’t go all the way through but is sufficient to hold it.

  2. Freeze the banana pieces for 1 hour.

  3. After 1 hour, melt the chocolate (you can do this in the microwave on a low heat setting or on the stove) and mix with hot coconut cream and melted coconut oil together in a small cup. This should form a pretty liquidy mixture.

  4. Remove the bananas from the freezer and quickly dip each piece of banana into the chocolate mixture. You can also use a spoon to drizzle the chocolate mixture over the banana.

  5. Then, using your hands or a spoon, sprinkle shredded coconut and whatever other toppings you want over the chocolate before it hardens.

  6. Wait 1-2 minutes for the chocolate to solidify a bit and then enjoy immediately.
