Olde English Trifle

This lovely layered dessert is perfect to bring to any occasion and makes enough to share. Olde English Trifle is layers of fruit and sponge cake with whipped cream and other delicious add-ins. This is a traditional English trifle that has all the flavors of the one that has been loved for years. Cherries and bananas give it a fruity touch, while whipped cream makes it delightfully light and creamy. The combination of layers in this quick and easy dessert recipe is decadent.

Ingredients

  • 4 trifle sponges, or other sponge cake
  • 4 tablespoon cherry jam
  • 15 ratafia biscuits
  • 4 tablespoon sherry
  • 2 bananas, peeled and sliced
  • 1/2 lemon, zest and juice
  • 225 gram cherries, stoned
  • 450 milliliter milk
  • 3 eggs
  • 50 gram sugar
  • 150 milliliter whipped cream
  • glacee cherries, to decorate
  • 25 gram chopped toasted nuts, to decorate

Instructions

  1. Cut the trifle sponges in half and spread with jam, then sandwich together. Arrange in the base of a glass serving dish.
     
  2. Cover with ratafias and sprinkle with sherry.
     
  3. Coat the bananas in lemon juice. Arrange the bananas and cherries on top of the ratafias.
     
  4. Heat the milk until almost boiling. In a large bowl, whisk together the eggs, lemon zest and sugar until pale, then pour on the hot milk, stirring continuously.
     
  5. Return to the saucepan and heat gently, stirring continuously, until the custard thickens enough to coat the back of a wooden spoon. Do not allow to boil. This takes about 20 minutes. Set aside to cool.
     
  6. Pour the custard over the trifle and leave until cold. Pipe the cream on top of the trifle and decorate with glacee cherries and nuts.
