Ingredients

  • 16 ounce mango
  • 1 cup chia seeds
  • 2 cup coconut milk
  • 4 tablespoon maple syrup

Instructions

  1. Peel and core half of fresh mangoes and transfer to a blender.

  2. Blend into a purée.

  3. Chop the remaining fresh mango into chunks.

  4. Whisk together chia seeds, coconut milk, maple syrup, and puréed mango in a mixing bowl.

  5. Mix in chopped mangoes.

  6. Place the mixture into the fridge for 15 minutes.

  7. Give a quick stir and put it back in the fridge to set for 15 minutes.

  8. Spoon into serving glasses.

  9. Top with chopped mangoes, whipped cream, or nuts.
