Ingredients

  • Crust
  • 2 cup graham cracker crumbs
  • 1/2 cup butter, melted
  • Filling
  • 2 cup powdered sugar
  • 1/2 cup butter, softened
  • 3 tablespoon heavy cream
  • 1 teaspoon vanilla
  • 1 cup sweetened shredded coconut
  • Whipped Topping
  • 1 tub whipped topping
  • 1 tablespoon powdered sugar
  • 1 (14-ounce) can crushed pineapple, including juices

Instructions

  1. Preheat oven to 325 degrees F.

  2. In a bowl, combine graham cracker crumbs and butter, mix until combined. Press into the bottom of a 8x8 baking dish. Bake in the oven for 10 minutes, and then cool completely on a rack.

  3. Meanwhile, combine all filling ingredients with a mixer and gently spread over cooled crust. Cover with plastic wrap and refrigerate while preparing the topping.

  4. In a large bowl, combine whipped topping with powdered sugar and crushed pineapple. Spread over the set filling. Cover again and refrigerate until ready to serve.
