Frozen Chocolate Banana Lollies

"Frozen Chocolate Banana Ice Lollies. An amazing and slightly more healthy treat than traditional ice cream. Creamy frozen banana encased in a crispy chocolate shell and coated with chopped walnuts. Guilt free lollies! Well, kind of. I mean, it’s better than ice cream, but the chocolate sauce and whatever toppings you choose may add back some of the guilt that the banana took away. These frozen chocolate banana lollies are an amazing snack or dessert nonetheless. Living in a hot country the odd ice cream or ice lolly when it gets really hot is essential. I was really just thinking about low cal dessert options for the new year when I landed on the idea of banana lollies. I’d also recently made this imitation Ice Magic Sauce so the two kind of came together into these frozen banana lollies. "

Ingredients

  • 1 banana, peeled & halved
  • 30 gram milk chocolate
  • 1 teaspoon coconut oil

Instructions

  1. Peel and halve the bananas. Insert a lolly stick into each half. Freeze the bananas for 3 hours, or overnight.

  2. Make up the chocolate sauce. Place a heatproof bowl over a small pan of boiling water and melt and then add the coconut milk and combine. Alternatively you can melt the chocolate in the microwave in 20 second bursts.

  3. Holding the lollies over a bowl, use a spoon to drizzle the chocolate sauce over the top (see note 1). Over a different bowl immediately sprinkle the topping over while turning. Word of warning – the sauce will harden very quickly.

  4. Return to the freezer for at least 2 hours and enjoy!
