Broccoli Salad with Bacon and Mandarin Oranges

When the weather is warm and you are packing food up for a picnic in the park, make sure you don't forget to bring this delicious Broccoli Salad with Bacon and Mandarin Oranges. This classic staple for barbeques and outdoor summer parties gets a bit of a twist in this recipe. Juicy mandarin oranges and chewy raisins add a great fruity flavor to the smoky bacon and creamy mayonnaise. Almonds give a sweet, nutty flavor that goes perfectly with the earthy taste of the crunchy broccoli. You will have a hard time leaving room on your plate for anything else once you've tasted this broccoli salad.

Ingredients

  • 1 egg plus 1 egg yolk, slightly beaten
  • 1/2 cup sugar
  • 1 1/2 teaspoon cornstarch
  • 1 teaspoon dry mustard
  • 1/4 cup tarragon wine vinegar
  • 1/4 cup water
  • 3 tablespoon butter, softened
  • 1/2 cup Hellmans mayonnaise
  • 4 cup fresh broccoli
  • 1/2 cup raisins
  • 6 slice bacon, cooked and crumbled
  • 2 cup fresh mushrooms, sliced
  • 1/2 cup almonds, slivered and toasted
  • 1 (11-ounce) can mandarin oranges, drained
  • 1/2 large red onion, chopped

Instructions

  1. In top of double boiler whisk together egg, yolk, sugar, cornstarch, and mustard.
     
  2. Combine vinegar and water. Slowly pour into egg mixture, whisking constantly.
     
  3. Place over hot water and cook, stirring constantly until mixture thickens. Remove from heat; stir in butter and mayo.
     
  4. Chill.
     
  5. Toss dressing with remaining ingredients in serving bowl.
