Light and fluffy, they are stuffed with a cream cheese filling, and topped with Cool Whip and a maraschino cherry to give it that fruity flavor that we absolutely adore. A great treat to bring to a family potluck and as a contribution to the dessert table, you'll want to make extra of these fruity mini cakes.

Ingredients

  • 1 box white cake mix
  • 1 can (21 -ounces) cherry pie filling
  • 3 eggs, beaten
  • 3 ounce cream cheese
  • cool whip for topping (optional)
  • maraschino cherries for topping (optional)

Instructions

  1. Preheat oven to 350 degrees F.

  2. Line a muffin pan with cupcake liners or spray with cooking spray.

  3. Run cake mix, cherry pie filling and eggs through a food processor or blender.

  4. Fill cupcake liners or pan 3/4 full with batter.

  5. Cut cream cheese into 24 pieces.

  6. Gently place a piece of cream cheese on top of the batter.

  7. Bake for 22-24 minutes.

  8. Cool completely on wire rack.

  9. If you like, you can top your cupcakes with whipped cream and a Maraschino cherry.
