Ingredients

  • 1/4 cup millet, uncooked
  • 1/4 cup barley, uncooked
  • 1/3 cup brown rice, uncooked
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1/2 cup finely chopped carrots
  • 16oz can kidney beans or other beans, rinsed and drained (10 oz)
  • 8 ounce can tomato sauce
  • 16oz can tomatoes, chopped and drained, reserving liquid
  • 1 1/2 cup canned or frozen corn, drained
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp garlic powder
  • salt
  • pepper

Instructions

Combine all ingredients in a slow cooker. Add water to reserved tomato liquid to equal 2 1/2 cups. Stir into grain mixture. Cover and cook on low for 8 hours. Stir before serving. Serves 8 as a side dish or 6 as a main course.
