Bachelor's Beef Stroganoff

A family favorite that has brought everyone running towards the dinner table for years, beef stroganoff recipes have a special place in our hearts. A wonderful comfort food to have in your collection of recipes, this old fashioned dish makes for a creamy dinner. With egg noddles, and strips of seasoned beef in a rich and creamy sauce it's hard to stop at just one bite. Enjoy this quick and easy recipe for Bachelor's Beef Stroganoff.

Ingredients

  • 2 pound chuck roast, excess fat trimmed and cut into 1-inch cubes
  • 1 onion, chopped
  • 2 can (10.75 ounces each) of condensed Cream of Mushroom soup
  • 1 can (8-ounces) mushroom pieces, or use fresh
  • 1/2 teaspoon black pepper
  • 8 ounce cream cheese, room temperature
  • 1/2 cup sour cream, room temperature
  • Large egg noodles, (for 8 people)

Instructions

  1. Place meat, onion, canned mushrooms, pepper and soup into the slow cooker.
     
  2. Cook on low for 6 to 8 hours.
     
  3. One half hour before serving add the cream cheese, stir until cheese is combined.
     
  4. Right before serving stir in the sour cream. Note: If you use fresh mushrooms do not add them to the pot until just before you add the cream cheese. Serve over pasta.
