Pork Roast with Apples

Pork and apples are a happy couple, so it's no wonder that this Pork Roast with Apples would be delicious. This slow cooker pot roast recipe is a great fall weekend meal. Let it cook up as you go apple picking, play in the leaves, or take a walk.

Ingredients

  • 2 pound boneless pork shoulder roast or pork sirloin roast
  • 2 tablespoon cooking oil
  • 1 1/4 cup apple cider or apple juice
  • 2 teaspoon instant beef bouillon granules
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon pepper
  • 2 medium potatoes, peeled and quartered
  • 2 large carrots, cut into 2-inch pieces
  • 1 medium onion, chopped
  • 2 medium cooking apples, cored and cut into wedges

Instructions

  1. Trim fat from meat. In a 4 to 6-quart pot, brown meat on all sides in hot oil. Cut meat, if necessary, to fit into a 3 1/2 or 4-quart slow cooker.
     
  2. In a bowl, mix apple cider, beef bouillon granules, mustard, and pepper.  Set aside.
     
  3. Place potatoes, carrots, and onion in the cooker.  Add meat.  Add cider mix.  Cover and cook on low setting for 9 to 11 hours, or until tender.
     
  4. Increase heat to high. Add apple wedges. Cook, covered, for 30 to 45 minutes more, or until apples are tender.
