Lovely Cauliflower and Potato Curry

If you're intimidated by Indian cooking and want a simple recipe for vegetable curry, try this Lovely Cauliflower and Potato Curry. Also known as aloo gobi, this vegetable curry recipe requires a lot of spices but not a ton of effort.

Ingredients

  • 4 cup potatoes, peeled and quartered
  • 1 small cauliflower, cut into florets
  • a pinch of asafetida
  • 3/4 teaspoon ground turmeric
  • 1/2 teaspoon chilli powder
  • 1 1/2 teaspoon ground cumin
  • 3/4 teaspoon salt
  • big pinch of sugar
  • 2 tomatoes, chopped
  • 1 1/4 cup water
  • 1/2 teaspoon garam masala
  • 1/2 cup wheat berries (optional)

Instructions

  1. Add all ingredients to the slow cooker and cook on low for approximately six hours.
     
  2. If you're adding wheat berries, cook them on high with an additional cup of water for an hour, then add remaining ingredients and cook on low.
     
  3. With the wheat berries, if things start drying out, add more water.
